Chris and Trish Meyer have released a new book entitled After Effects Apprentice. The book covers the core features of AE along with a complete lesson dedicated to 3 new features in CS3.
I'm currently working through Creating Motion Graphics Vol. 1 and Vol. 2. I may check into the new one in the future.
